I know I don't usually post recipes on here, but since I have recently found myself as the "cook" at home I have decided to post the best recipes I make. What I love about this one is that it is really easy, although it takes some time to bake.
I was searching on Pinterest for some ideas to make dinner and came across this pin that said "180 calories each - stuffed peppers healthy recipe" I was intrigued because we have all been talking about starting Weight Watchers once I can diet again. I looked at the recipe and decided that although it was only 180 calories, it was also kinda boring, so I decided to change it up a bit. Here is my version of Stuffed Peppers:
*****I didn't take any pictures of me making this recipe because frankly I wanted to try it to make sure it would turn out good with the changes I made to the original. Then I decided I would take pictures of the leftovers when I ate them for lunch the next day. Well that didn't happen either because I was trying to cook my food and let the cable guy in at the same time, when the power went out. So long story short, no pictures :(
Stuffed Peppers
1 pound ground sausage (can use any meat, beef, chicken, turkey, etc)
1 cup of white rice (can use brown rice as well, I just can't stand the texture of brown rice)
1 jar spaghetti sauce
1 small onion
2 cloves of garlic
1tsp salt
1 tbs basil
5 peppers
Preheat the oven to 350 degrees. Cook 1 cup of rice according to package. While that is cooking chop onion and garlic and saute until onions start to soften. Toss in sausage and brown. Stir in salt, basil and 1/3 of the jar of spaghetti sauce. You can add more sauce if needed, the mix should remain thick, the sauce is working as a "glue" to hold the meat and rice together. Let the mix simmer.
While sauce is simmering, cut peppers. I chose to cut them in half length-wise but you can just cut the tops off. Hollow out the seeds. Fill the peppers with the mix and cook for 40-50 mins. I pulled them out at 40 mins when the peppers were soft.
Then spoon some of the remaining sauce on top of the peppers and place back in the oven for 5-10 mins. Once the timer goes off enjoy!
